Woman’s Club to host Cooking Class Feb. 16

Chef Louise Nielsen will be cooking a five-course meal at the Woman’s Club’s  3rd annual Cooking Class on Saturday, Feb. 16, from 11 a.m. to 3 p.m. at the senior center. Tickets cost $45 per person. The menu consists of stuffed dates, cold cucumber and shrimp soup with cilantro, coriander marinated pork tenderloin with creamy polenta, salad with radishes, feta and cumin vinaigrette and Meyer lemon parfait with phyllo cookies. Recipes will be provided for attendees to take home.

Chef Louise recently moved to Canyon Lake from Annapolis, Maryland. She was trained in the culinary field at the Culinary Institute of America, a private college and culinary school in Hyde Park, New York, that specializes in culinary, baking and pastry arts education.

Louise is a certified pastry chef with the American Culinary Federation, certified hospitality educator and member of Les Dames d’Escoffier. She spent years as a chef instructor at a Maryland Community College where she taught baking and pastry credit and personal enrichment classes. Prior to that, Louise spent many years in Washington, D.C., restaurants as a pastry chef.
